Čokoladna torta s hruškami, orehi in piškotno osnovo

Ingredients
Piškotna osnova
  • 120 g pirinih piškotov brez sladkorja
  • 5 JŽ stopljenega masla
  • 1 beljak
Hruškin pire
  • 2 hruški (olupljeni in naribani)
  • 100 g jabolčno-hruškinega pireja
  • 1 ČŽ vanilijeve esence
  • 1 1/2 JŽ želatine v prahu
Čokoladni mousse
  • 150 g temne čokolade (75%, slajene s fruktozo)
  • 52 g masla
  • 15 g želatine v prahu
  • 285 g sladke smetane
  • 1 jajce
  • 1 rumenjak
  • 1/2 JŽ ruma
  • 1/2 JŽ medu
  • 75 g nasekljanih orehov

Instructions
Piškotna osnova
  1. Piškote stresite v vrečko in jih s kuhinjskim kladivom ali valjarjem zdrobite v drobne drobtine. V posodi jih zmešajte s stopljenim maslom in beljakom, da dobite lepljivo maso.
  2. Pekač obložite s peki papirjem in nanj položite obroč za torte s premerom 18 cm. Vanj stresite piškotno maso in jo dobro pritisnite ob dno. Pecite 8 -10 minut pri 180 stopinjah Celzija, nato pa pustite, da se popolnoma ohladi. Piškotno osnovo prestavite na lep krožnik, odstranite peki papir, obroč pa pustite, da bo hruške in čokoladni mousse "držal" na mestu.
Hruškin pire
  1. Za hruškin pire dobro pokuhajte hruške, jabolčno - hruškov pire in vanilijevo esenco, da se sadje čim bolj razpusti. Lahko mu malo "pomagate" tudi s paličnim mešalnikom. Na koncu dodajte želatino in dobro premešajte, nato pa pustite, da se ohladi, preden prelijete čez piškotno osnovo. Shranite v hladilniku, medtem ko pripravljate čokoladni mousse.
Čokoladni mousse
  1. Čokolado in maslo stopite nad vodno kopeljo in pustite, da se malo ohladi.
  2. Medtem v eni posodi stepite sladko smetano, v drugi pa jajca in med. Jajčni mešanici dodajte še rum in dobro premešajte.
  3. Stopljeni čokoladi dodajte želatino in dobro premešajte, da ne nastanejo grudice.
  4. V jajčno mešanico zlijte čokolado, nato pa še stepeno smetano, in nato z lopatico nežno mešajte, da "uide" čim manj zraka. Ko je čokolada povsem enakomerno vmešana, dodajte še orehe in dobro, a nežno, premešajte.
  5. Čokoladni mousse prelijte v tortni model, poravnajte in spravite v hladilnik čez noč. Torto zjutraj še okrasite in je nared.
