You can have toast and scrambled or soft boiled eggs for breakfast or you can have these delicious mini pizzas. I vote for the second option!
They are so simple to make you probably can’t even call this a recipe but here goes:
spelt toast (2 per person)
turkey ham and/or prosciutto
gouda and cheddar cheese (or any other melting type of cheese)
1 egg (per person)
lots of oregano
pesto genovese (optional)
Preheat the oven to 210 degrees Celsius.
Slice the turkey ham into small squares, add grated cheeses, egg and oregano and mix well. Distribute the mixture over the toasts and grate some more cheese on top. One can never add too much cheese, right? Top with some pesto genovese if you like the taste of it and place the toast on a baking tray that you have covered with baking paper.
Bake for 5 minutes and voila, breakfast is ready!
