Chocolate chip cookies. An all time classic. And a delicious one if I may add. This recipe here only uses almond flour. Yes, you read correctly, only almond flour. No wheat flour, no spelt flour, no any other flour, just almond. And they are just too delicious! I warn you, it’s hard to stop at just having one.
I adapted the original recipe a little since it contained sugar. It’s always risky to change a recipe that works. It’s even riskier changing it when trying it for the very first time. But the change I made (substituting sugar with date paste) turned out amazing.
Ingredients:
1 1/2 cups almond flour
1/4 cup butter, room temperature
1/4 cup date paste or xylitol
1 egg
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon baking soda
1/4 cup chocolate chips
Instructions:
1. Preheat your oven to 190 degrees Celsius.
2. To make the almond flour, ground 6 ounces of almonds in a food processor until it’s all been ground into a thin flour.
3. Cream the butter and date paste together until smooth. Mix in the egg. Next, add the almond flour, vanilla, salt, and baking soda and mix until it’s all incorporated. Fold in the chocolate chips.
4. Line a baking tray with parchment paper. Scoop the batter into even portions onto the parchment paper and bake for 12-15 minutes until golden brown. Let cool slightly before removing the cookies from the tray.
