I really felt like having some pizza today. But not the regular tomato sauce, ham, mozzarella and mushrooms pizza. I don’t eat pizza with tomato sauce anyway. But I didn’t feel like having it with roasted red pepper ketchup either. To be honest, mostly because I didn’t feel like making the red pepper ketchup.
So I came up with this amazing combination of sweetness and saltiness all on one pizza. I made a really tiny pizza, only using half of the Spelt flour pizza recipe, and topped it with sauteed onions, cooked ham, feta cheese, dried figs and arugula and it was so delicious!Ingredients:
1/2 medium onion
olive oil
feta cheese
prosciutto/cooked ham
1 dried fig, roughly chopped
1 handful fresh arugula
Instructions:
1. Heat a medium pan with olive oil. Saute onions until golden brown so that they get that little sweetnes.
2. Preheat the oven to 200 degrees Celsius. Roll out the spelt pizza dough and spread the onions over the base.
3. Top with prosciutto or cooked ham and sprinkle with chopped dried figs and feta.
4. Bake the pizza for 15 minutes, top with arugula and serve immediately.
