Don’t you just love the sound of that – clafoutis. That alone is a good enough reason for me to go and make myself one or two for breakfast. And that is before I even get started on how delicious it is! When I found this recipe, I decided to give it a go. I adapted it a little to serve one and to use the fruit I had in my pantry.
Ingredients:
1 pear/handfull of blueberries/1 apple
1 ½ tablespoons honey
1 egg (separated)
1 1/2 tablespoons almond flour
dash of salt
1/2 teaspoon vanilla
1 cup rice milk
Crushed hazelnuts (optional)
Instructions:
1. Heat the oven to 190 degrees Celsius. Grease a medium or a few small pans with some butter.
2. Toss the honey and pear slices together in a mixing bowl. Do the same if using apples or blueberries or any other fruit. I am sure raspberries would work great as well.
3. In another mixing bowl whisk the egg yolk together, add the almond flour and salt. Then whisk in the milk and vanilla. In another mixing bowl mix the egg white until it forms soft peaks. Carefully mix the egg whites into the almond mixture. Pour the batter in the pan(s) and stir in some fruit. Top the mixture with the remaining fruit and crushed hazelnuts (optional) and put in the preheated oven.
4. Bake for 40-45 minutes in using a medium pan or around 25-30 minutes if using small pans, or until the clafoutis is golden brown.
