My boyfriend and I sometimes go to the market on Saturdays to buy some fresh eggs, and my boyfriend always wonders of to a gentleman selling homemade pastries. He always buys the carob cake and eats it with the biggest joy in the world. So of course I decided to surprise him with my own homemade carob cake, with spelt flour and no sugar and also our delicious homegrown apples. I adapted the original recipe a little and my boyfriend loved it.

Instructions
  1. Beat the egg yolks and sweeteners until pale yellow. Add all other ingredients and mix well.
  2. In a separate bowl, beat the egg whites until hard peaks form. Gently fold them into the mixture.
  3. Grease a baking dish with butter and pour in the batter. Bake for 30 minutes at 180 degrees Celsius. Let cool and then glaze with melted chocolate with coconut butter and milk.
