I feel like this year just started and just like that, December is just around the corner. And with December come constant celebrations and get-togethers. If you want to treat your guests, young or old, to something special, this is the mocktail for you. You can get frozen mango all year round and to my experience, the frozen ones are usually sweeter and better than the fresh ones I tend to choose. So it’s a win-win situation.
INGREDIENTS:
450g diced, frozen or fresh, mango
1 cup water
¾ cup (110g) granulated Agragold sugar
500ml sparkling water
More granulated sugar for glass decoration
HOW TO:
Place the mango, water and sugar in a pan and bring to a boil. Reduce the heat to low, and let simmer for 30 minutes, half-covered to allow for the steam to go out. Once cooked, pour through a strainer to get the syrup in a bowl and keep the “meat” on top. Mash the meat with a fork to allow for some additional syrup to get through.
Transfer the mango meat that didn’t get through the strainer into a smoothie maker and blend well. Cool both the syrup and the “jam” completely.
To serve the mocktail, first, decorate the glasses by wetting the rims with lemon and then dipping them into granulated sugar. Add lots of ice in the glasses and top it off with two tablespoons of the “jam” in each glass. Pour the sparkling water over it, dividing the 500ml of sparkling water into 4 glasses. Add a splash of the syrup in each and serve immediately. You can easily turn this mocktail into a cocktail by adding some vodka too if you feel like it.
